Aloo Paratha
Aloo paratha is my favourite dish with potatoes. Hindi's aloo and paratha words for "stuffed flatbread" and "potato," respectively, make it clear that aloo paratha is an unleavened whole wheat flatbread filled with a savoury spicy potato combination. It is an Indian meal made using bread. It is a favoured breakfast option in the Indian subcontinent. By definition, aloo parathas are parathas that include layers of boiling, mashed, and spiced potatoes inside. First, whole wheat flour is used to create a dough. After that, mashed or grated potatoes are seasoned. The savoury potato mixture is then filled and sealed inside a little disc of dough.
Aloo Tikki
If there’s one more integral dish of the Indian street food culture, it is the Aloo Tikki. Made with aloo (potatoes), spices and herbs these crispy, crusty and oh-so-good tikki (patties) are loved just as it is or as part of other preparations like a chaat, etc. This post has the basic Aloo Tikki recipe, plus I have perked it up with a savory green peas stuffing (that can be easily given a miss). Papri Chaat
Papdi chaat is a popular and delightful North Indian street food snack that is made with papdi (a.k.a fried flour crispies or crackers), boiled chickpeas, potatoes, pakoris (fried black gram fritters), curd (yogurt), spices and various chutneys. Papdi can be homemade or also store-brought. Papri chaat (or papdi chaat) is crispy fried-dough wafers served with typical chaat ingredients such as chickpeas, boiled potatoes, yogurt sauce, and tamarind and coriander chutneys; it may also contain pomegranate seeds.
Dahi Vada
Dahi Vada are a popular street food from North India. “Dahi” means yogurt and “Vada” means deep fried fritters or dumplings, and the recipe is about as straightforward as it sounds. Fluffy, melt-in-your-mouth dumplings are coated in a simple creamy yogurt, and topped with classic Indian chutneys. Dahi means yogurt and vada is fritters (deep fried kind) so the literal translation for these is fritters dunked in yogurt. The base of this dish is vada (fritters) made of Urad dal (split skinned black gram lentils).
Sahi Paneer
Shahi paneer or Paneer Rajwadi or Chhena Rajwadi or Raajsi Chhena is a preparation of chhena or paneer, native to the Indian subcontinent, consisting of a thick gravy of cream, tomatoes and Indian spices. This dish is prepared by emulsifying tomatoes, onions, ground cashews, clarified butter and cream into a curry, with the addition of chhena/paneer cubes and a variety of spices. It is mainly eaten with traditional Indian flat-breads like tawa roti or tandoori roti, rice and bread.
Chilli Paneer
Chilli Paneer is one of the most popular recipes in Indo-Chinese cuisine. It is simply flour or batter coated fried paneer cubes tossed in a spicy, salty, tangy and sweet sauce made with green bell peppers, garlic, ginger, green chillies, soy sauce and more seasonings. The origin of Chilli Paneer is attributed to an Indian chef Nelson Wang. He is of Chinese origin and the founder of the iconic China Garden in Mumbai's Kemps' Corner. He was the first to use the Indian ingredient paneer and mix it with soy sauce, cornstarch, onions and capsicums.
